Colors, balloons, water jets, sweets symbolizes nothing else but the festival of colors and joy-HOLI

Holi is celebrated in the month of February/March with the onset of change in weather. This festival announces the commencement of the spring season. People with their friends, family and kin fill the sky with Colors. The welcoming and the wishing sound of ‘Happy Holi’ reverberates the street. It is truly said that in this festival enemies also become friends. Just a hug and colors herald the sign of forgetting the past and welcoming the new relation. Exchanging the sweets and gifts with near and dear ones, parties and celebration, shopping and so much are the common features of this festival. The entire country and every street are drenched with colors and water.

Holi is though the festival of colors, water, sweets and water jets, it has a history of its own:

On the eve of this colorful day the fire is worshipped. Therefore, Holi is also prevalent as ‘Festival of Colors’. On this day the woods are arranged in the form of a bonfire but not lighted in the day time. Women worship this bonfire with wheat flour, turmeric, water and light an earthen lamp under that. (Though the ritual differs in every part of the country)

The night arrives with the burning of the bonfire. The males burn the wheat stem in that fire and significantly welcome the fresh spring season. This burning symbolizes the triumph of good over evil.

The query in your mind, why this symbol?

There was the king called ‘kansa’ in the city of Mathura. He wanted to kill his nephew ‘Krishna’. For that he sends his sister ‘Holika’ who was blessed with the power of fire. She took Krishna on her lap and sat on the fire. With the high flames, ‘Holika’, though so much powerful got burnt to ashes and lord Krishna was safe. Since then, the bonfire is light up representing the history.

Next day is the main festival of colors. This trend of celebration is too associated with lord Krishna. One day, he played a prank with his ‘Radha’ and other girls by applying colors on them and throwing water through water jets. This naughty act of Krishna got so many acceptances by the people that it flourished as a tradition and a full-fledged festival.

Though playing with colors and water is rampant in Holi, there are few places that follow the exclusive trend they inherited from their ancestors anonymously since past many years. In western side, the selected people form a huge human pyramid and reaches on the top where an earthen bowl filled with buttermilk is broken down by them. During that phase womenfolk throw buckets of colorful water on them.

At Mathura side, a very old tradition is prevalent. Women beat men with bamboo sticks on their back.

Holi celebration starts with the burning of bonfire representing Holika and culminates with all the fun-filled activities.

I would like to share some of the typical Indian Holi cuisines particular in the north-eastern part….

v GUNJIA – For about 20-25 pieces

Ingredients:

Refined Flour— 1kg

Evaporated milk – 250gm

Sugar – 100gm

Dry fruit – to taste-your wish

Oil – to deep fry

Method:

1. Prepare dough of the refined flour with the lukewarm water. Keep aside covered with the damp cloth;

2. On the other side fry the evaporated milk till it is deep brown. Add dry fruits, sugar and sweetening agents of your wish. Make it smooth and crushed while frying. Keep it to cool;

3. Make small balls of the dough prepared and roll it down thin. Put the spoonful mixture on the flattened roll. Fold it in the semi-circle shape. Twist turn the border so that the semi-prepared ‘Gunjias’ does not open out;

4. Deep fry in the hot oil till golden brown.

5. Serve them to the Holi guests.

v KANJI WATER-sour-salty in taste

Ingredients:

In about half a liter of water add salt, turmeric, grinded mustard and little red chilies powder. Keep it in the sunlight for 3-4 days. The water will be sour and salty in taste plus it has typical kind of bitterness which gives it mouth watery taste.

In this water you can drop in sliced red/black carrots OR the fried balls of green/black gram.

v MATHARI

Ingredients:

Refined flour – 1kg

Celery seeds – few grains

Oil – to deep fry

Method:

1. Prepare a dough adding celery seeds in it with the lukewarm water;

2. Prepare small flat discs of the dough. About 20-25 can be made;

3. Make little holes on it with the help of a fork;

4. Deep fry till golden brown.

Serve with chili sauce.

These preparations can be eaten up for few days without getting spoiled.
